Kan Gucch Pulao - Gucchi or Mushrooms or Morels

Ingredients

  • 2 tbsp Ghee
  • 4 Cloves
  • 6 Green Cardamom
  • 2 Black Cardamom
  • 1-inch Cinnamon Stick
  • ½ tsp Cumin Seeds
  • 10 pieces Kan-Gucch (Morels)
  • 1 cup Basmati Rice
  • Salt to taste
  • 10 strands of saffron soaked in 1/8 cup of milk.




METHOD

  • Wash thoroughly Kan-gucch and soak in 2 cups of warm water for an hour.
  • Soak the rice in water for 30 minutes.
  • Heat ghee in a thick bottom pan.
  • Once the ghee is hot, add the soaked kan-gucch and fry for 2-3 minutes.
  • Add the whole spices and let them fry for a minute on medium flame.
  • Add cumin seeds and let them crackle for a few seconds.
  • Now add the soaked rice in the pan.
  • Add Kan-gucch in the pan & add  1 2/3  cups of water (little less than two cups)
  • Add Safferon soaked in Milk
  • Add salt.
  • Cover the pan and cook the pulao on low heat until all the water is absorbed and Kan -gucch is cooked.
  • Remove the pan from heat and let it rest for 5 minutes.
  • Fluff it gently with a fork.
  • Serve hot with a raita.
