Ingredients

  • Mutton 1lb
  • Cumin seeds 1tsp.
  • Coriander seeds 3tsp.
  • Fennel seeds 1tsp.
  • Dry Red whole Chili 4 
  • Onions Sliced 2
  • Tomatoes sliced 2
  • Ginger Garlic pate 2tsp.
  • Salt as per taste or 1tsp
  • Turmeric ¾ tsp.
  • Yogurt ½ cup
  • Water 1 cup 
  • Green Chili 1 chopped
  • Ginger Julien’s 1 inch
  • Coriander leaves 2 tsp.
  • Oil 3 Tbs.

METHOD

Preparation:

  1. Take a pan on medium heat & dry roast all ingredients from line # 2 to 5.
  2. Dry Roast for 3 to 4 minutes
  3. Once Roasted, allow to cool
  4. Put all roasted spices in a grinder and make powder of these spices & keep aside. (Karahi Masala)
  5. Take Karahi or thick bottom pan and add 3 TBS. oil in it.
  6. Turn on Flame on medium heat.
  7. Add sliced onions and cook for 2 minutes.
  8. Add mutton and mix it well with onions and let it cook for 2 minutes.
  9. Add ginger garlic paste, give a mix and cook for 2 more minutes on medium heat
  10. Add sliced tomatoes and mix well on medium heat.
  11. Add Salt, Turmeric and mix well. Put lid on and cook for 15 minutes on medium heat. Satire occasionally.
  12. Add water and satire well and let it cook for another 20 minutes on medium heat till meat is tender. Or (pressure cook till 3 whistles)
  13. Add yogurt & cook for another 5 minutes on high heat.
  14. Add Karahi Masala (dry roast powder) 3 tsps. and mix well
  15. Cook until almost water dries, and you see oil on sides.
  16. Add chopped green chili and ginger Julien’s
  17. Add green coriander and give a good mix

 

Your Karahi Meat is ready to eat with Roti or Rice.
