Ingredients

  • 1lb. Red / Orange Carrots
  • 2 cups Full Fat Milk
  • 3 Tbs. Ghee / clarified butter
  • 1 tsp cardamom powder
  • ¾ cup Sugar or as per taste
  • ½ Cup Khoya or 3 Tbs. Milk Powder
  • Almond, cashews and pistachio sliver Virk for garnishing


Gajar Ka Halwa Recipe 



METHOD

  1. Wash carrot and peel them.
  2. Dice the carrot into small cubes
  3. Take pressure cooker on medium heat and add diced carrots.
  4. Add 1 cup of Milk & pressure cook it for 2 whistles. Let the pressure cooker cool. Open it and add rest of milk and let it boil on medium heat.
  5. Gradually and gently crush down the carrots.
  6. Once the carrots absorb milk to the point that no liquid milk is visible, add sugar and gee.
  7. Cook till halwa comes together leaving the sides of the cooker glazed. Add more gee if required
  8. Add cardamom powder.
  9. Fry for 2-3 minutes on low heat.
  10. Keep stirring continuously.
  11. Add grated khoya or powder milk and cook for 4-5 minutes on low heat until ghee starts to leave on the sides.
  12. Keep stirring in between.
  13. Garnish with almond and pistachio sliver Virk.

            Serve warm
