1 lb. Lamb ribs (traditionally only ribs are used) or Rack of Lamb
2 cups water
1½ cups milk 1 tsp garam masala
A pinch of asafetida
1tsp. of turmeric powder
1 tsp Fennel powder
1 tsp. Ginger powder
1tsp.cinamon powder
4 green Cardamom
4 cloves Salt.
Ghee for frying
METHOD
Put Pressure cooker or thick bottom pattila on a stove & turn it on.
Put water and all above ingredients except gee in a pressure cooker.
Let it boil for 4 minutes and close the lid of pressure cooker till it whistles.
Turn off stove on 3rd whistle or till meat is tender.
Open lid now & if juice is still watery than try to cook on high heat till all water is almost absorbed. (If you are cooking in a pan, cook on medium heat for 25 minutes till meat is tender)
Take out meat pieces and keep aside
Take a flat pan or a kadaie and put Gee in it and turn on stove on medium heat.
Now put meat pieces in it and fry golden crisp on both sides
Now take a nice platter and put all meat prices on it and garnish with Silver Virk or Rop-Varuk
Serve Hot with steam rice
