Ingredients

  • To Marinate 1 cups Soya Chunks
  • To Marinate Hot Water
  • To Marinate ½ cup yogurt
  • To Marinate ½ tsp. turmeric powder
  • To Marinate 1 tsp. Chili powder
  • To Marinate Salt 1 tsp
  • 1 cup Basmati
  • 2 Tbs. clarified butter or Ghee
  • 1 Tbs. oil
  • 1 stick Cinnamon
  • 2 Cloves
  • 4 Cardamom
  • 2 big brown Cardamom / Badi Elaichi
  • 1 bay leaf
  • ½ tsp. cumin seeds
  • 10-15 strands of saffron soaked in 2 tbs. hot water or milk
  • 1 medium size Onion sliced
  • 1 Tsp. Ginger Garlic paste
  • 2 medium size tomatoes chopped
  • ½ tsp. turmeric powder
  • ½ tsp. chili powder
  • 1 tsp. Garam Masala
  • 10-15 Mint leaves
  • Few Coriander Leaves
  • 1 tsp. Salt or as per taste
  • 1 ½ cups Water


Soya Chunk Pulao 



METHOD

  • Soak Soya Chunks in hot water for 15 minutes
  • Soak rice for 25-30 minutes in water
  • Squeeze Soya Chunks
  • Take a bowl, add yogurt in it, red chili powder, turmeric powder & salt, mix well
  • Add soaked & squeezed soya chunks in it and put aside for 30 minutes till marinated
  • Keep pressure cooker on a stove and turn on stove on medium heat.
  • Add Oil & when oil is little hot add cumin seeds, cardamom, cloves, bay leaves, cinnamon & roast these
  • Add onions, green chilis & Sauté
  • When onions are transparent add Ginger- Garlic paste and statue again
  • Add tomatoes and sauté
  • Add Turmeric Powder, Chili powder, Garam masala & sauté
  • At this point add marinated soya chunks and cook for 4-5 minutes
  • Add mint Leaves, coriander leaves and salt & mix well
  • Add soaked rice and add water
  • Add Saffron water
  • Close the lid and pressure cook for 2-3 whistles
  • Turn off stove and let it rest for 10 minutes

 

Soya chunk Pulao is ready and serve hot with cucumber Raita or any raita of your choice.
