Ingredients

  • 1 lb. Kohlrabi
  • 3 cloves
  • 3 tsp. red chili powder or paprika
  • 1/8 tsp turmeric powder
  • ½ tsp. ginger powder
  • 1 tsp. fennel powder
  • Pinch of heeng
  • 1 cup Cooking oil for frying
  • 1tsp. Vear masala
  • Salt to taste




METHOD

  • Heat oil in a pan on medium to high flame.
  • Cut kohlrabi in thick (1 cm. in thickness) (Generally for dum monj round shaped pieces are cut)
  • Now turn the heat to medium flame
  • Add cut kohlrabi in to oil and fry on medium heat. Fry until both sides are dark brown in color (make sure not to burn them)
  • In a separate pan add 4 tsp. of oil. Let it heat on medium flame.
  • Add cloves in oil and let them roast for 2-3 sec.
  • Add pinch of heeng in to it.
  • Add red chili powder in oil and roast it for 3-4 seconds on a low flame (make sure not to burn)
  • Add turmeric powder, ginger powder & Fennel powder
  • Add 1 ½ cup of water over spices and let it boil until thickens
  • Add ¾ tsp. of salt or as per taste.
  • Put fried kohlrabi in the same masala mixture pan and mix well.  
  • Turn the heat on medium
  • Cover the pan with lid for next 15-20 minutes by stirring 1-2 times in between.
  • Add green chili
  • Simmer Dum-Monj on low flame till you see oil on top  
  • Add vear masala in to it     
  • Turn off heat and Dum Monj are ready to serve
