Ingredients

  • Goat or lamb Meat 2 lb.
  • Oil ½ cup oil
  • Yogurt 2/3 Cup
  • Cloves 4 pcs.
  • Chili Powder 2 tsp
  • Paprika powder 2 tsp
  • Turmeric 1/8 tsp
  • Ginger powder 1 tsp
  • Fennel 2 tsp
  • Whole Cumin seeds ½ tsp
  • Zeera powder 1 tsp
  • Heeng /asafetida 1 pinch
  • Cinnamon Stick 2 sticks
  • Tej Patta 2 Pcs.
  • Black Cardamom 4 pcs
  • Green Cardamom 4 pcs.
  • Garam Masala ¼ tsp
  • Salt 1 tsp or as per taste
  • Sugar ¼ tsp
  • Ghee 2 tsp


Rogan Josh is a popular Kashmiri dish believed to have originated in Persia before making its way to Kashmir and then Northern India and beyond. In Persian, 'rogan' means clarified butter and 'josh' means hot or passionate). Its signature red color was historically the result of using mild red Kashmiri chilis.



METHOD

Method:

 

  • Take a heavy bottomed Pan. Put Oil in it and heat it on medium flame.
  •  Add in it Cloves, Cumin Seeds, Black Cardamom, green cardamom, Tej-patta , a pinch of Asafetida & Cinnamon sticks.
  • Mix Meat pieces with yogurt nicely, so that all pieces get evenly covered with it.
  • Add Meat to the Pan. Go on turning the Meat with a spoon or spatula
  • Add salt and put lid on.
  • Cook meat until water dries up, approximately 25 to 30 minutes on a medium heat. When the Juices or water from the meat dries up, then begin to cook meat in the oil, continue turning till Meat pieces turn golden-brown.
  • Add Red Chili Powder, Turmeric powder and 1/4 tsp. of Sugar.
  • Go on turning Meat till it becomes a brownish red color
  • Add Dry Ginger and Fennel Powder & zeera powder in 1 cup of water. Stir and mix well and add to the meat. let simmer on low heat till the Meat becomes tender and the gravy is red, thick and oily. Now add ‘Ghee’ or Butter (Optional) and Garam Masala. Cook for 2 or 3 minutes more. ‘Rogan Josh is ready for serving.

            Serve with steam white rice
