Ingredients

For rice:

  • 8 cup water
  • 2 pods cardamom
  • 3 cloves
  • 1-inch cinnamon
  • 2 bay leaf / tej-patta
  • 1 tsp pepper
  • 1 tsp salt
  • 2 tsp oil
  • 1 chili slit
  • 1 cup basmati rice soaked 20 minutes


for biryani:

  • 2 tbsp oil
  • 1 tsp ghee
  • 1 bay leaf / tej patta
  • 1 mace / javitri
  • 1-inch cinnamon
  • 1-star anise
  • 2 back cardamom
  • 4 cloves
  • 4 pods green cardamom
  • 1 tsp cumin / jeera
  • ½ tsp fennel / saunf
  • 1 onion sliced
  • 1 tsp ginger garlic paste
  • 1 tomato finely chopped
  • 1 potato cubed
  • 1 carrot chopped
  • ½ tsp salt or as per taste
  • ¼ tsp turmeric
  • 1 tsp Kashmiri red chili powder
  • ½ tsp cumin powder
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 4 dried plums
  • ½ tsp salt
  • ¾ cup  yogurt
  • 6 beans chopped
  • 8 florets cauliflower / gobi
  • 2 tbsp peas
  • 6 cubes Red bel pepper
  • 10 Cubes of fried Paneer
  • 1 cup water


For layering:

  • 4 tbsp coriander finely chopped
  • 4 tbsp fried onion
  • 2 tbsp mint / pudina finely chopped
  • ¼ tsp saffron or food color
  • ¼ cup water
  • 1 tsp ghee

Instructions

biryani rice preparation:

  1. Firstly, in a large vessel or Pot take 8 cup of water.
  2. Add spices like 2 pods cardamom, 4 cloves, 1-inch cinnamon, 2 bay leaf, ½ tsp pepper.
  3. Add 1 tsp salt, 2 tsp oil and 1 chili.
  4. Boil for 2 minutes or until flavors is in the water.
  5. Add in 1 cup basmati rice and stir well. make sure to soak rice for at least 20 minutes.
  6. Boil for 3 minutes or until rice is half cooked. do not cook fully.
  7. Drain off the rice and keep aside.

 

 biryani preparation:

 

  1. Add 2 tbsp oil and 1 tsp ghee in a large kadai. Turn heat on medium flame
  2. Add 1 bay leaf, 1 mace, 1-inch cinnamon, 1-star anise, 2 back cardamom, 4 cloves, 4 pods cardamom, 1 tsp whole cumin and ½ tsp fennel.
  3. Add 1 thinly sliced onion
  4. Add1 tsp ginger garlic paste.
  5. Sauté until onions turn golden brown.
  6. Add 1 tomato cubes and sauté until tomatoes turn soft and mushy.
  7. Add 1 potato cubes, ½ carrot and ½ tsp salt.
  8. cover and cook until potatoes are half cooked.
  9. Add ¼ tsp turmeric, 1 tsp chili powder, ½ tsp cumin powder, 1 tsp garam masala, 1 tsp coriander powder, 4 dried plums and ½ tsp salt.
  10. Sauté until spices turn aromatic.
  11. Add ¾ cup curd and sauté until oil is released.
  12. Add 6 cut beans, 8 florets cauliflower, 2 tbsp peas, 6 cubes red bell pepper, and 10 cubes of Fried Paneer.
  13. Sauté for a minute or until its combined well.
  14. Add 1 cup water and mix well.
  15. Cover and cook for 5 minutes or until vegetables are half cooked.
  16. Take 1 cup of gravy and keep aside.
  17. Layer up with 2 tbsp coriander and 2 tbsp fried onion.
  18. Spread half of cooked rice over the biryani gravy.
  19. Top with reserved gravy uniformly.
  20. Spread remaining cooked rice and level up.
  21. Top with 2 tbsp coriander, 2 tbsp mint and 2 tbsp fried onion.
  22. Sprinkle ¼ tsp saffron food color, ¼ cup water and 1 tsp ghee.
  23. Cover with aluminum foil and close the lid. you can also use the dough to seal.
  24. Simmer for 20 minutes or until rice is cooked fully.
  25. Put it in a platter & garnish with fried onions, Green coriander and Mint

 

Veg. Biryani is ready enjoy with raita.
