Ingredients

  • Turnip or Shalgum 2 lbs.
  • Salt 1 tsp. or as per taste
  • Oil 1 ½ cup for cooking & Frying
  • Cumin seeds ½ tsp
  • Cinnamon 1 to 2-inch stick
  • Big Cardamom 2pcs.
  • Small Cardamom 4 pcs.
  • Peppercorns 8 pcs.
  • Cloves 3 pcs.
  • Fennel Powder 1 tsp.
  • Ginger powder ½ tsp.
  • Turmeric ¼ tsp
  • Red Chili powder ½ sp.
  • Paprika 3 tsp.
  • Cumin Powder 1 tsp.
  • ¼ tsp or Pinch of garam masala.
  • Gee 2 tsp.
  • Pinch of Heeng

METHOD

Instructions:

  1. Peel & cut Turnips in to 4 halves. Put in a bowl
  2. Add 2 tbs. salt
  3. Let it rest for 20 minutes. Water will come out and throw the water out & pat dry turnips
  4. Add oil 1 ½ cup in a kadai or a pan
  5. Put it on a medium heat and let it get hot
  6. Deep Fry all the turnip pieces till golden brown & take it out. (you can use same oil for cooking)
  7. In another pan, take 5 tbs. of oil from kadai. Let it get hot on medium heat
  8. Add Cumin seed, cinnamon stick, big & small cardamoms, peppercorns, heeng & Cloves.
  9. Add fried Turnips in it. Sauté for a minute
  10. Add Fennel, ginger, turmeric, Cumin powder, chili & Paprika to it and sauté.
  11. Add salt as per taste and add 2 ½ cups of water.
  12. Let it cook for 15-20 minutes with lid on medium heat.
  13. When water is dried up and turnip is soft (not mushy) & you can see oil on top, turn off stove.
  14. Add gee & garam masala. Let it rest for 10 minutes
  15. Serve it with white stem rice.
