Ingredients

  • 1½ cup all-purpose flour 
  • 2 tsp semolina / suji, fine
  • 1/2 tsp cumin / jeera
  • ½ tsp. Ajwain 
  • 1 tsp red chili powder
  • 1 tsp salt or as per taste
  • 2 tbsp ghee / clarified butter
  • water for kneading
  • oil for frying


Spicy Khasta Matri



METHOD

  1. Take a large mixing bowl, add 1½ cup All-purpose flour or Maida and 2 tsp Suji.  Adding Suji makes Matri crispy.
  2. Add 1/2 tsp cumin, 1 tsp chili powder, ½ tsp. Ajwain and 1 tsp salt or as per taste
  3. mix well making sure all the spices are well combined with the flour.
  4. heat 2 tbsp ghee and pour over flour.
  5. crumble and mix until the flour turns moist and holds shape when pressed with the fist.
  6. Add ½ cup water and knead the dough.
  7. knead to smooth and tight dough adding water as required.
  8. grease the dough with 1 tsp oil and rest for 15 minutes.
  9. knead the dough again making sure its tight and smooth.
  10. Divide the dough into half and roll gently.
  11. roll to thick chapati shape.
  12. cut into diamond shapes with sharp knife or using pizza cutter.
  13. Deep fry in hot oil by dropping one by one.
  14. keep the flame on low to medium and stir occasionally.
  15. Fry on low flame for 15 to 20 minutes or until Matri turns crisp and flaky.
  16. Drain off the Matri over kitchen paper to absorb excess oil.

Finally, enjoy spicy Matri with hot cup of tea or store in an airtight container for a month
