Ingredients

  • Haand (Dandelion greens)                                    2 lb. / 2 bunches
  • Chicken Pieces                                                       2 lb.
  • Saboot Zeera/ whole Cumin                                 ½ tsp.
  • Green Eilachi/ Cardamom powder                      ½ tsp.
  • Badi Eilachi / Cardamom powder                        ½ tsp.
  • Loung / Cloves                                          ½ tsp.
  • Dalchini/ Cinnamon Powder                                 ½ tsp.
  • Turmeric/ Haldi Powder                           1 tsp.
  • Red Mirchi/ chili/ paprika powder                       2 tsp.
  • Ginger/ Sounth Powder                            1 tsp.
  • Onion                                                                    ½ onion chopped        
  • Garlic Paste                                                           1 ½ tsp.
  • Salt                                                                        1 tsp or as per taste
  • Gee                                                                        1 tsp.


Haand-t-Kokur (Dandelion Greens & Chicken)



METHOD

Method:

  1. Add two cups of water in a pressure cooker on a high flame
  2. Add Haand / Dandelion Greens in pressure cooker and pressure cook up to 3 whistles.
  3. Turn of flame & let it rest on the stove till there is no more pressure in the cooker
  4. Open cooker & take out Haand in a Stainer and discard water. Wash Haand/ dandelion under tap water thoroughly so that bitterness comes out.
  5. Grind Haand / dandelion in a grinder or mixer by adding ½ cup to 1 cup of water.
  6. In a Pan take ½ cup or 4 oz. of oil on medium heat and shallow fry chicken pieces till golden brown. Take out fried chicken in a plate.
  7. In the same Pan add ½ tsp. of Zeera, let it crackle and add chopped Onions.
  8. Fry onion till light pink color or translucent
  9. Add 1 ½ tsp of Garlic paste & stir it for a minute.
  10. Add Haand/ dandelion Puree to it & stir well
  11. Add Badi Elichi, choti Elichi, Laung and Cinnamon Powder & mix well.
  12. Add salt & stir well.
  13. Add Turmeric, Ginger & Chili / paprika powder & mix well.
  14. Add 1 ½ cups or 12 oz. of water & mix well.
  15. Add fried Chicken pieces and let it cook on medium heat with Lid on till chicken is soft or tender. Let water dry & you see oil on the sides.
  16. Add 1 tsp. of Gee and Haand -t-Kokur is ready to serve.
